Brown Butter Peanut Butter & Jelly Cookies
A childhood favorite turned into the most delicious cookie! This is truly one of my all time favorite cookies to make – I pretty much eat the entire batch the minute they get out of the oven. I hope you enjoy this sweet twist on a cozy classic!








Brown Butter Peanut Butter & Jelly Cookies
Ingredients
- 12 tbsp butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/3 cup peanut butter (smooth or chunky)
- 1 tbsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 – 1 1/2 cup flour
- Jelly or jam in the flavor of your choice
- optional: Maldon or coarse sea salt for topping
Instructions
- Brown the butter: melt butter over medium heat in a small saucepan. Heat slow and low, stirring constantly until butter turns a warm amber color and smells nutty. Be sure to watch carefully, as butter can go from brown to burnt very quickly! Let browned butter cool and come to room temperature. If you’d like to speed up the process, you can transfer it to the fridge for 10-20 minutes, making sure you let it come back to room temp if it solidifies too much.
- Preheat oven to 350 degrees and line a large baking sheet with parchment paper.
- In a large bowl, whisk 1 1/4 cups flour, baking soda, baking powder, and salt to combine.
- Scrape butter into the bowl of a stand mixer, making sure to get all of the brown bits at the bottom. Add in sugars and beat at a medium speed until pale and fluffy. Add in egg, peanut butter and vanilla, mix until combined. Setting to your lowest speed, slowly add in dry ingredients until just combined – do not over mix! If your dough seems too wet, add in up to an additional 1/4 cup of flour 1 tbsp at a time and mix in by hand. You are looking for the dough to be smooth and firm, but still slightly sticky.
- To form cookies – take a large scoop of cookie dough, rolling it into a ball between your hands. Flatten the ball slightly, then cup your hand to create a well. Place 1/2 tbsp of jelly in the center of your well. Pinch the sides of your ball up and together, encasing the jelly and reforming your dough ball. This can be a bit messy! It’s okay if any jelly seeps out – it will add to the beautiful cracked effect.
- Place dough balls on a parchment lined baking sheet 2” apart to allow for spreading and bake for 12-15 minutes or until they start to brown around the edges. (I love to top with some Maldon right out of the oven!) Transfer cookies to a drying rack and let cool.
